Vinegar is the most preferable preservatives due to the following reason-
(i) Vinegar has no side effect.
(ii) Since it is a mild acid and hence there is no chance for acidity. In addition it keeps balance of P” between food and body.
(iii) It reduces the pH value and food becomes acidic and the bacteria and other microorganism cannot grow in the acidic medium and they are destroyed.
(iv) It is soluble in water at any ration. Because it forms active hydrogen bond with water. Hence it is easily mixed with water of food and protect microorganism.
(v) Since its boiling point is higher than water and hence then: is no chance for vaporization of it when heating during food processing.
