Describe the Process for the Canning of Mango

Mango canning process:

(i) Fresh and completely ripped mangoes are selected for canning. Then it is washed properly and extra wastage are removed from it.

(ii) Then the mango is sliced by a slicer and preserved in a can. In the time of slicing it is given suitable shape and seeds are removed.

(iii) These slice are kept in can equally and added 40% sugar solution and 0.25% citric acid to it. Sugar and acid act as preservatives.

(iv) Then it is processed in boiled water 20-30 min. after exhausting.

(v) Then the can is cooled and leveled. Then it is preserved in a dry cold and shadowy place.
